Job Duties
n
n
+ Must have an overall understanding of the brine system and the functions of the computerized batch system, valves, pumps, salt system, and all other brine room systems.
n
+ Monitor levels of finished brine tanks to determine when to start the batch making sequence from the computerized system.
n
+ Start the water system at the beginning of the shift.
n
+ Make sodium benzoate solution according to procedure, manually adding bags of dry sodium benzoate.
n
+ Assure that pumps/valves/mixers are set properly.
n
+ Check levels of ingredient tanks and barrels to be certain of an adequate supply.
n
+ Begin the batch sequence.
n
+ Monitor the addition of ingredients as the batch is made.
n
+ Add flavoring at proper tank level.
n
+ Check the PH with litmus paper and salt level with the salometer.
n
+ Draw sample from the finished batch and give the sample to the QC supervisor for testing.
n
+ Record all required data on the brine log sheet. Verify that the meter readings match the formula.
n
+ Immediately report any issues to supervisor.
n
+ Communicate information as in regards to ingredient/brine levels between each shifts operators.
n
+ After the last batch is made for the shift, shut down the system.
n
+ Perform end of month inventory and handing out production supplies at the start of the shift.
n
+ Empty waste containers when full.
n
+ Rinsed empty barrels of flavoring and lactic acid and record on log sheet located in the receiving office.
n
+ Keep flavorings separated, rotated and labeled by code accordingly.
n
+ Must keep work area clean and free from debris.
n
+ All other duties as assigned by supervisor.
n
+ Must adhere to all safety policies.

+ Standing and walking is required 100% of the time.
n
+ The use of both hands required 100% of the time.
n
+ Some lifting of 50+ lbs required.
n
+ Some pushing and pulling will be required.
n
+ Ability to go up and down stairs constantly.
n
+ Some bending required.
n
+ Must be able to properly and safely operate a hand jack.
n
Where skills and abilities are equal, seniority will prevail. Selected candidate might be required to have some of the training completed on the 1st shift.
