With humble beginnings hosting cruises on the Great Barrier Reef, the company has grown into a borderless fleet of three ships carrying between 72 and 120 guests. For almost four decades, Coral Expeditions has operated with a single purpose – to take small groups of likeminded explorers to remote places with expert guidance and warm Australian hospitality. Our industry leading SailSAFE program instigated a successful return to domestic sailing during the pandemic, allowing us to embark on explorations to the Kimberley, Tasmania and South Australia. In 2022/23, we will return to international sailings including Papua New Guinea, New Zealand, and the new Small Islands of the Indian Ocean series. 

The Role

The Coral Expeditions Galley Assistant (GA) will assist the Chefs to provide all guests and crew with nourishing meals, to the highest standard at all times

Duties include:

  • Cleaning and washing of all dishes.
  • Ensure galley cleaning and hygiene maintenance is maintained.
  • Assistance with food preparation as directed.
  • Adhere to the published trip menu cycle ensuring all meals are prepared in readiness for mealtimes.
  • Maintain good operational and organisational skills to adhere to galley operations, resulting in good time management.
  • Maintain appropriately clean and well organised dry stores, fridges, cool room and freezer.
  • Maintain an effective stock rotation program.
  • Maintain food safety, galley cleanliness and hygiene always, ensuring compliance with HACCP and local council requirements.
  • Ensure waste is kept to a minimum.
  • Ensure galley equipment is cared for and maintained.
  • Provide support and training to joining and training crew.

Qualifications Required

  • First Aid & CPR
  • Passport

Qualifications willing to obtain

  • Australian Seafarers book or other country equivalent discharge book
  • AMSA Endorsed Certificate of Safety Training (CoST)
  • Crowd control & Crisis Management
  • AMSA Medical
  • MSIC Card
  • Yellow Fever Vaccination
  • Must be fully vaccinated against COVID-19
